I used a basic white cake recipe (you can use a boxed white cake mix if you prefer). Instead of water, I added 1 1/3 cup of fresh squeezed orange juice with pulp (while squeezing I scraped out as much pulp as I could - no membrains). The rest of the recipe is the same - eggs, oil, and such. Baked at 350 for 18 minutes. They are topped with a vanilla glaze - 1 cup powder sugar, 1 to 2 Tbs milk (adding a little at a time till desired thickness is acheived) and a 1/4 tsp vanilla extract. Spoon glaze over completely cooled cupcakes. SERVE!
Since our kids have all grown and left to start their own lives, I have found myself trying to redefine my purpose. I must admit that Bob and I are having a great time with this new journey. I have narrowed down my passions to cooking and creating. Cooking is simple. The creating is complicated. Creating includes sewing, art projects, upcycling, and writing. Now my next goal will be to find the time to do it all!

I made these last night and they were great, lots of flavor and they were pretty. I will make these again and again. Linda
